daily dinner: eggplant curry with mushroom caps

Today’s dinner on a dime:  eggplant curry with mushroom caps, all courtesy of the fine folks at Trader Joe’s (and Be Wise Ranch):  bainghan barta and quick-cooking brown rice (TJ’s), spiced up with carrots and red pepper from our CSA box, with TJ’s pre-made mushroom caps as an appetizer.  (Paired, of course, with Stone’s India Pale Ale, the official drink of the San Delicious household.)

    • Believe it or not, no. Lame, right? We just wanted a quick, lazy dinner and the eggplant curry is available in the (gasp!) frozen section at Trader Joe’s. I was skeptical, but it was fairly good!
